How to make an oozing gooey chocolate self-saucing pudding that’s actually GOOD for you

Two Australian best friends and dietitians have shared their healthy recipe to make a delicious self-saucing pudding.

Abbey and Lily, from Port Macquarie, New South Wales, who call themselves the ‘Clean Kweens’ posted a video on Instagram of the mouthwatering dessert and said it’s bound to impress guests.

At first glance the dish seems like a regular chocolate pudding, but once carved with a spoon the soft layer hiding underneath oozes out.  

The healthy dish is extremely easy to make and requires almond meal, plain four, cocoa, baking powder, eggs, olive oil, Natvia, milk and chocolate chips.

At first glance the dish seems like a regular chocolate pudding, but once carved with a spoon the pudding hiding underneath oozes out

‘Please save and make this recipe, it will make your whole week, we promise!! It reminds us of chocolate pudding our Nan would bring as kids,’ the dietitians captioned the Instagram post.

In the video, a piece of the pudding is scooped up using a spoon, exposing the delicious oozing goodness hiding beneath the surface.

To make the dish, first preheat the oven to 180 degrees Celsius and grease four ramekins or one baking tin.

In the video, a piece of the pudding is scooped up using a spoon, exposing the delicious oozing goodness hiding beneath the surface

Then combine the ingredients and pour the mixture evenly into the ramekins or tin.

Make the sauce by combining the three ingredients (cocoa, Natvia and boiling water) in a bowl, then pour over the pudding mixture.

Bake in the oven for no longer than 30 minutes before serving and enjoy. 

The dessert would be perfect for those wanting to cut down on sugar while also satisfying their sweet tooth.

In the comments the dietitians said the dessert ‘worked a treat’ when made with gluten free and dairy free alternative ingredients.

Others online were mesmerised by the oozing goodness of the dessert and wished to try it themselves

How to make the delicious self-saucing pudding: 

INGREDIENTS:

  • 1 cup almond meal 
  • 2/3 cup plain flour 
  • 1/2 cup cocoa/cacao 
  • 1 tsp baking powder 
  • 2 eggs 
  • 1/4 cup olive oil 
  • 1/3 cup Natvia 
  • 1/3 cup milk 
  • 1/4 cup choc chips 

CHOCOLATE SAUCE: 

  • 1/4 cup cocoa/cacao 
  • 1/4 cup Natvia 
  • 400ml boiling water 

METHOD: 

1. Preheat oven to 180 degrees Celsius

2. Grease 4 ramekins or 1 baking tin

3. Pour the mixture evenly into ramekins/tin

4. Pour the sauce over until it covers the pudding

5. Bake in the oven for around 25-30 minutes

6. Serve while hot or heat up later
